Question, is Low-Poly easy or harder to make than just not low Poly? :0

It kinda depends I think? Lowpoly can sometimes be a bit janky to animate, especially with stuff like loose cloth etc. But for me it was a easier entry way into learning 3D. I do think it might be a little easier than realistic 3D for example.
